I am all about colorful lunches this week. Today’s lunch and one snack:
- Spinach with a mix of quinoa, black beans (cooked in the rice cooker), scallions, peppers and Nacho Cheeze Sauce, with a lime for additional flavor
- Protein Powder Hemp Hummus with seaweed (the two work really well together)

Did you peel that lime and eat it as a snack? My grandfather used to do that.
