It has been a long, long couple of days. Here is yesterday’s lunchbox with extra snacks for an extra long day:
- Grilled asparagus and roasted sweet potato
- My first attempt at a grain-free vegan savory muffin with broccoli and zucchini pulp from making green juice – it is good but a bit mushy in the center, so I need to make this again
- White bean puree with garlic scapes
- Chia juice pulp crackers
- Sour Cream and Onion Kale Chips
- Faye’s Chia Chocolate Pudding for the Exhausted
