Thank you for all the nice wishes in comments on my last post, as well as over email and Twitter. I so appreciate it. I am feeling better enough, though still sniffly and now appear to be losing my voice. I have also hit the stage I invariably hit a couple of days of feeling under the weather – I get cranky. Does that happen to any of you?
I attended a CLE tonight, so today’s lunchbox (literally, today’s, not yesterday’s or last week’s) is actually a lunch and dinner and snack combination.
- Snack: Chia Pudding for the Exhausted from Raw Lawyer
- Lunch: Mac and Chickpeas, which is essentially Reinvented Mac and Peas, but reinvented yet again with chickpeas instead of green peas, atop a bed of baby spinach, with a side of celery and a cashew-white-bean-basil dip I was playing with this week – it’s a mashup of two favorite recipes: Gena’s Cashew Pizza Cheese and Kimm’s Cashew Pumpkin Seed Cheese – I want to tweak the concept more, but am loving the texture so far:
- Dinner: Black Bean with Red Velvet Mole from from Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes and a side of kale chips.
I had not had mole in several years – in Brooklyn I used to live near this awesome Mexican restaurant with great mole dishes, and I started missing it almost as soon as I moved to Washington. In fact, my lunch the day the movers arrived was the traditional mole from this restaurant. Of course, I would not be able to have this mole today, because I do remember it contained some amount of wheat and dairy, so this is moot, but the Red Velvet Mole really hit the flavor notes well, and I did not find the preparation too time-consuming either. Next time I want to spoon it over something other than black beans, or perhaps try Ricki’s recipe.
And with that, I am off to take my cranky self to sleep.

Glad you are feeling a little better, Valerie, but sorry about the crankies! Yes, I sometimes get the crankies. Mine always seem to be due to being thrown off schedule/not being able to achieve my usual "list," etc. I like the use of chickpeas in your new reincarnation of your mac 'n cheese!
