Today, Faye of Raw Lawyer is sharing a lunchbox prepared in the midst of a busy week – be sure to stop over at the Raw Lawyer for recipes, reflections and also a series called Fast Fixes. And I am so glad she is finding the Lemon Carob Bites a quick treat.
Yet another busy week sandwiched between travel and trips. Hopefully, there will be a week when I don’t open with that sentiment. I suppose however that is one of the reasons I decided to start blogging; to communicate that you can live a full, busy life and still eat a whole foods, healthy diet.
I stocked my lunchbox with foods that were already pre-prepared or required no preparation. The juice probably required the most effort.
- Garden salad with roasted garlic oil
- Orange
- Veggie juice: apple, celery, carrots and spinach
- White cabbage cultured vegetables
- Valerie’s Lemon Carob Bites
- Cut up veg: celery, cucumber, grape tomatoes and red pepper
- My Chia Chocolate Pudding for the Exhausted (it looks a little off because I didn’t take time to shake it)
The garden salad consisted of pre-washed baby spinach topped with chopped up pre-washed, pre-cut veggies from my my crudites box. Same with the cut veg – I just had to pull them out of the box.
The orange came off my counter, Valerie’s Lemon Bites took a total of 10 minutes to make the night before, so I slipped two into my lunch. I make 10 jars of cultured vegetables every 3 months or so, so that’s another fast fix.
And the juice probably took about 25 minutes to make the night before. I juice 2-3 times a week and usually make enough for two days. As for today’s funny looking, yet nutritious chia pudding, I just poured pre-made almond milk, chia seeds and chocolate protein powder together in a container with a lid.
It took me perhaps 10 minutes to pull this lunch together.
Preparation is everything.
