You have heard me rave about this black bean with mole sauce before, but I have to say it again – it is pretty spectacular. We made it with no substitutions though I would have liked to swap the corn chips out – my husband had some corn chips that were gluten-free so we used those to thicken the sauce, nit next time I will use corn tortillas or maybe some masa harina – and it really is a thick delicious sauce, reminiscent of the real thing. It also works very well as a salad topper.
