Today’s lunch and snacks are all lemony except for the pudding:
- White beans (cooked in the rice cooker) tossed with leftover quinoa and vegan pesto
- Kale massaged with olive oil, fresh lemon juice and a bit of sea salt
- Roasted eggplant, pureed with parsley and lemon juice
- Chia juice pulp crackers with extra lemon juice (Gena’s Lemon Thyme Pulp Crackers would be lovely with this lunchbox too)
- Chia Chocolate Pudding for the Exhausted
