When I was under the weather a couple of weeks ago, I made Cheryl’s sniffle stew, which I have since made two more times – the last time, I substituted black eyed peas for the chickpeas, and it was just as delicious. I am convinced it contributed to my feeling better – it is soothing and comforting, but also provides a nice gingery punch, which is always good for colds. Fortunately, you do not need to be sniffling to enjoy it.
Today’s lunchbox and snacks:
- Raw red peppers and carrots with a side of cashew basil cheese
- Cheryl’s sniffle stew with black-eyed peas
- Green juice: kale, broccoli, carrots, lime, ginger, parsley
Amazing how different the light is in different parts of the apartment.
Happy Wednesday!
