Happy Monday. I hope you had a great weekend. Today’s lunchbox and snacks:
- Super quick green smoothie
- Spinach and romaine, grilled red onions, raw red and green peppers (all left over from making taco salads last night) repurposed into a peanut-sauced salad, with steamed tempeh, crumbled atop the salad, and drizzled with Emily’s four ingredient peanut sauce, which also makes an awesome salad dressing.
- Sundried Tomato Dip (the basil variation) from Veganomicon – I followed the recipe pretty closely, though I cut back the extra-virgin olive oil to under a tablespoon and omitted the salt. It still packs a great flavor punch, and goes well with Brad’s Raw Red Pepper Chips – these actually remind me of Juice Pulp Crackers in texture, though have a different flavor.
Astute readers will note it is rare that I include packaged products in my lunchboxes. I got an incredible deal on Brad’s products through OpenSky, so I figured it would lighten the food prep for a couple of days – I love Brad’s products, just not the prices – though I think they are fair prices, I know I can make the same things at home Still, it was nice to be able to just grab a bag of these this morning – I specifically packed enough food so that I could go to yoga tonight and not be hungry even though I also went to 7am yoga this morning. I spread out lunch and snacks so as to have a light, early dinner.

I'm amazed at the twice a day yoga! So impressive.
Okay brad needs to write me too! I want some!!! And the peanut salad dressing! YUM!!! And eventually I will try your savory muffins, I PROMISE!
