No, I did not eat a whole block of Twin Oaks Tofu as part of my lunchbox last Thursday, but it sure made life more convenient. I was very low on time, but knew my lunch was a bit low on protein so I figured I would see how the Twin Oaks Tofu did in terms of standing up on its own. I already knew it did not have to be pressed, and has a nice firm bite, so it was worth a shot.
The lunchbox and snacks:
- Spiralized zucchini, raw green pepper and enough peanut-sauced vegetable stir-fry leftover to make two meals, especially when supplemented with the tofu
- Raspberry Chocolate Pudding
- A carrot-cucumber-ginger juice I picked up from Java Green
I also brought an empty container to store the leftover tofu in. It worked out well – this particular tofu is so firm that when mixed into the sauce of the stir-fry (which was at the bottom of the container so you cannot see it) it was delicious despite not having been grilled or roasted. It is a nice shortcut. Lunch was the zucchini, some of the stir-fry, tofu, and green pepper, and for my small (pre-yoga) dinner, I just had the last of the vegetable with peanut sauce and green peppers. It worked out quite well.

green pepper is so under rated isn't it? i love it
I LOVE Twin Oaks Tofu too, but I can't find it in the Arlington Whole Food anymore! What gives?!
