I am on a total hemp and quinoa kick, as this lunchbox of lunch and 3 snacks shows:
- Quinoa Protein Bowl from Choosing Raw – if you like nutty, mustardy, lemony goodness, you must try the sauce on this recipe. I was out of frozen edamame so substituted some white beans (cooked in the rice cooker) I had in the freezer to make the recipe. Incidentally I made the whole protein bowl recipe in the rice cooker and it worked perfectly.
- Green pepper with Cheezy Hemp Red Pepper Dip – another one of my favorite recipes from Gena.
- A chia pudding with blueberries and cooked quinoa – I think this needs more tweaking.
- Green juice: cucumber, celery, carrot, ginger, lemon, basil stalks, kale stalks, chard
Hemp and quinoa are two things that I find easy to digest and are full of protein. Heather and I have talked about protein a lot as we prepared for round two of guest-blogging for each other – be sure to check out her great lunchbox from yesterday here.
