Today I am guest-blogging over at Heather’s blog, Gluten-Free Cat. You might remember the lunchbox I shared with her back in April. At the time, Heather and I had been discussing lunchboxes and how to make them as nutrient-dense and energy-packed as possible. In the last few months, Heather has been experimenting with more raw and vegan foods (how good does her raw bread look?) and purchased a dehydrator, so today I am sharing a mostly raw lunchbox.
Here are the contents of the lunchbox, but do stop by over at Heather’s for more details and some thoughts on making lunch as energy-packed as possible and why I completely relate to Heather’s interest in raw foods:

- Carrot sticks and Choosing Raw Juice Pulp Crackers with Protein Powder Hemp Hummus
- Protein Packed Cheezy Hemp Kale Chips, also from Choosing Raw

I'll have you know that your lunch boxes are inspiring me! This morning I had to pack my lunch last minute and I had NOTHING prepared and I had no idea what to bring. I found some sliced turkey, so I put that in a container but then I remembered that you often just bring raw veggie… coudln't I just eat raw veggies? Would that really hurt? So I have some cherry tomatoes, I made a quick guacamole & I have some celery to dip in the guac, along with my turkey! thank you for giving me inspiration that comes up just when I need it! I'm very tempted to buy a dehydrador at ALDI, they have one for $20…I would like to make some of the dehydrated crackers/bread stuff… wondering if I would actually do it!
