I am still trying to figure out why I sometimes crave pumpkin and cinnamon in summer, but it is even odder during a heat wave. Today’s lunchbox and two snacks:
- White beans (cooked in the rice cooker) tossed with chopped green pepper and Cheezy Red Pepper Dressing, to top the raw spinach
- Cinque pancake (I have raved about this quick shortcut to a chickpea flour product before) topped with tomato paste and basic basil puree (basil leave pureed with olive oil, salt and a bit of lemon juice)
- Pumpkin Chia Pudding

I recently read that sometimes foods that seem contrary to the season (hot tea in the summer, for instance) are actually cooling to the body. Maybe cinnamon falls into that category? No matter, your lunch looks perfect and refreshing!
