In today’s lunchbox, I included:
- Caramel Apple Pie
- Chopped up celery, cucumber, red pepper and grape tomatoes with hummus
- Red and white cabbage cultured vegetables
- Chocolate Chia Pudding for the Exhausted
- Smoothie: alfalfa sprouts, sunflower sprouts, greens, lime, water and zucchini
- Chickpea Carrot Salad
The Caramel Apple Pie is an old favourite. I made it again for the first time in a while last week, and I really missed it. It’s rich in flavour and the caramel sauce is thick, gooey and creamy. It’s so satisfying.
The Chickpea Carrot Salad is an old recipe of mine. I’ve recently posted it on the blog. I love adding new veggies to it and experimenting. The chickpeas and the carrots make for a great base. If I soak and sprout the chickpeas before cooking them, I can digest them with no difficulty.

I just looked at the recipe for that caramel apple pie and can see why it is a favorite. Nut AND fruit packed.
