Happy Monday! This week is already looking like a long one, and it is only Monday. Tropical flavors are always a nice twist on a lunchbox. Here are lunch and one snack:
- Black beans (which seem hidden), tossed with pineapple, lime juice juice, peppers, scallions and thinly sliced red onions, with mango habanero salsa for topping
- Sour cream and onion kale chips
Here is to making it a good week. I made it to 7am yoga this morning, which made working late tonight much easier since I had my movement of the day done, and I felt like I focused on self-care despite a crazy day. Speaking of self-care, Cheryl and I decided to extend the retreat an additional week. The fifth theme is creativity, and Iris of Daily Dietribe wrote a beautiful post on the topic.
