Today’s lunchbox included lunch and three snacks:
- Hummus, with raw green pepper (hidden under the broccoli) for dipping, as well as a raw bread idea/attempt (a mashup of Faye’s Onion Bread method and Gena’s Raw Zucchini Wrap recipe)
- Carob cacao overnight oats
- Shirley’s Pumpkin Pie Smoothie with Honey Agave Whipped Cream – as you will see in my Adopt a Gluten-Free Blogger post tomorrow, Shirley was one of the two the gluten-free bloggers I adopted this month. I have become completely obsessed with this smoothie, even though it is summer.
- A cucumber, celery, beet, lemon juice I picked up from Java Green – I am still working on my fear of beets. I asked for extra lemon in my juice but that was actually too sour, and I love lemon. I still gulped it down though:
Any tips on liking beets in juice more? I like carrots instead so much more.

Looks like you're going for an all veggie juice, but a little apple and a little ginger work really well with beets for me. Celery has such a distinct taste, as do beets, so I tend not to have them together. Good luck!
I think Melissa (Gluten Free For Good) is the queen of all things beets. You might look to her blog for some flavor combo inspiration. 😉
I had forgotten that you had adopted me, too! So exciting. I'm thrilled you are enjoying that pumpkin pie smoothie so much. I just shared that for something the other day. I have to stock up on organic canned pumpking at the upscale grocery store in town as I still can't get any pumpkin at my basic grocery store.

I'm not a juicer, but love beets and banana in smoothie fashion. The two are like soulmates.
