Today’s lunchbox includes lunch and enough food for an additional snack:
- Spinach and romaine with crunchy tempeh from this recipe and some South River Miso Garlic Red Pepper Miso (for the gluten cross-contamination status of South River Miso, see the comments on this post)
- Steamed kale
- Grilled zucchini
- The last slice of my raw bread idea/attempt (a mashup of Faye’s Onion Bread method and Gena’s Raw Zucchini Wrap recipe)
The garlic red pepper miso is not very garlicky – more spicy and salty and works well with grilled zucchini which I otherwise find a bit bland, and every other component of this lunchbox.
