Happy Monday! I got back last night from HLS and immediately set out to get food for the week on track, which was helped by a little pre-planning prior to leaving for the weekend and a little help via purchased kale chips (yay OpenSky credit). Above is today’s lunchbox of lunch, dinner and several snacks:
- Romaine lettuce with red peppers, Twin Oaks Tofu (Italian Herb flavor) and Cheezy Red Pepper Hemp Dressing (which is packed under the tofu)
- Sauteed pepper, kale and zucchini, which I froze on Thursday to ensure the vegetables would not go back. I packed them with some leftover chickpeas, quinoa and truRoots sprouted bean trio which is why the lunchbox has a distinctly UFO shape, though not quite as UFO-ish as this lunchbox
- Brad’s Kale Chips (the plain kind which is anything but plain)
- Chia seeds, gluten-free oats, raw cacao mashed with a banana and some almond milk (basically a repeat of my HLS breakfast) – I ate half for breakfast and the other half as a snack in the late afternoon

While long-time readers of this lunchbox series (which is almost a year old!) know that sometimes I post a lunchbox from a few days earlier, above is the actual lunchbox I had today.

What fabulous lunch and dinner!!
I packed kale chips for my journey out to Philadelphia too. The bag served up three delightful snacks and reminded me how important it is to pack and prep snacks before traveling.
