So it is Wednesday and I took a completely unanticipated couple of days off from blogging. It all started with falling asleep early on Sunday night (totally unplanned, but clearly well-needed), followed by what I expected to be a light Monday, but which ended up not being so light. Speaking of Monday, here is that lunchbox:
It should have been good – it involved fresh figs, a pizza-flavored white bean dip, crunchy veggies, more white beans with Cheesy Red Pepper Hemp Dip (which I love). The pizza-flavored white bean dip had been delicious on Sunday night, but by lunchtime on Monday, the flavors had melded oddly, and while I took pictures of the lunchbox in the morning, I failed to notice that somehow there was pizza dip atop the figs, but fortunately that was easily resolved. The white beans with Cheesy Red Pepper Hemp Dip did help satisfy however, so that was good. In addition to the above, I had my emergency Lara Bar when I realized that my evening at work had just gotten extended a few hours and before I could run out to pick up some soup and a salad at Litestars. Really, though, I needed one of those Lunch/Dinner/Snacks lunchboxes on Monday.
Do you keep an emergency Lara Bar in your desk? I went through a phase where I would eat whatever emergency snacks I had even when there was no emergency, so I phased that out for a bit, but am glad I had brought one emergency Lara Bar to work with me last week. It sure came in handy Monday night.

Fresh figs are the best – such an evocative flavour!
I keep emergency sultanas in my bag, but I go through phases
