Happy Friday – it has been a busy week. Work was hectic until late last night and then today my husband and I drove to visit his family in upstate New York. I will post my lunchboxes for today (both lunch and dinner) over the weekend, because first I wanted to catch you all up on Wednesday’s and Thursday’s work lunchboxes.
Above is Wednesday’s lunchbox. Ignore the errant bit of fig in the peanut sauce. It encapsulates the nature of the week well. Lunch and two snacks:
- Iris’ Sunbutter Sauce from her Sweet Sesame Noodles recipe. I adore this recipe, but it is just as fun as a dipping sauce for sliced cucumbers and carrots.
- Crackers from the Cafe Gratitude cookbook (note, this is the pizza/flatbread recipe, but I tried to substitute some of the oil with more carrot juice – while they are delicious, they are definitely far crispier than the original recipe – oh and I forgot to score them pre-dehydrating, hence the ragged edges).
- Sliced figs
- Faye’s Chocolate Chia Pudding

Great idea on that sauce for dips! I always love your homemade crackers. They just look so appealing, even when not made as intended.
