As I mentioned, I was craving sandwiches upon returning from travelling, so I opted for wraps a couple of days this past week: This lunchbox contains:
- Brown rice tortilla (how-to on softening and toasting) stuffed with hummus, romaine, and roasted tofu with miso – the miso gives the whole experience umami and along with the hummus, a cheesy-but-not-cheese feel to the wrap
- Chocolate zucchini chia pudding
- Apple with almond butter packet, which I had bought for my travel crate of food but did not end up eating
