Time to see all the wonderful recipes that were submitted to the Zucchini Chocolate Blog Party which I am hosting with Victoria, the District Chocoholic. Victoria, whom I must thank for being the inspiration behind this blog party, as well as compiling the roundup links and photos, has her roundup up. On her blog you will see all the recipes submitted, both gluten-free and gluten-full, while the roundup here is solely the gluten-free vegan recipes.
I am still seeing a lot of zucchini at the local farmers’ market so it seems that, in this area, the zucchini season was long. I am so excited to try several of these recipes:
First up in the gluten-free vegan category (aka the ultimate challenge) is Rachel from My Munchable Musings with a recipe for Chococherry Zucchini Cookies:
Sheree from Cats in the Kitchen (love the blog name) attempted a vegan gluten-free cake in a mug concept – I had mused whether cake in a mug could be both vegan and gluten-free, and am delighted to hear it can be, especially considering it is not just cake, but Chocolate Zucchini Brownie in a Mug :
Speaking of brownies, my lovely co-host, Victoria made Zucchini Brownies, which also look amazing in their fudginess:
Beth from Boston to Berkeley submitted Roasted Zucchini and Potato Tacos with Mole and Avocado, which means you really could make a complete meal from recipes in this round-up – start with the tacos, and have your choice of dessert:
There was also a lot of chocolate zucchini smoothie love, thanks to my friends Gena and Faye. Gena made a Chocolate and Zucchini Smoothie with cacao nibs:
And Faye from Raw Lawyer made a Frozen Chocolate Zucchini Smoothie and Hemp Protein Powder:

So much fun, and so many delicious and creative recipes. I've been on the zucchini smoothie bandwagon lately and all these smoothie recipes look amazing.
I really love this! And I'm definitely going to make some version of those crazy tacos!
