Monday’s lunchbox held a multi-textured salad along with two snacks:
- Kale massaged with the last of my Wegman’s hummus from my trip (and packed right in the hummus container), topped with nutritional yeast, kale chip crumbs, cracker crumbs (great crouton replacement), and some red peppers. I also added a dash of liquid aminos and lemon juice. This was such a satisfying salad and held up well.
- Cashews, cacao nibs and almonds
- Crackers from my trip
