This month I am participating in the Brown-Bag Challenge where the Food Network’s Healthy Eats blog is teaming up with fellow food bloggers to host a month-long initiative to eat consciously and save money by packing a lunch each weekday instead of eating out. You can join here and share what you’re eating on Facebook and Twitter with the hashtag #brownbag.
Thursday’s lunchbox included an old favorite:
- Masoor Dal – I have been making recipe for red lentils with subtle spicing for almost four years, though had kind of forgotten it in the last year, which is silly, as it is ovely
- Kale salad topped with roasted butternut squash and a remake of my Reinvented Mac and Peas – I need to tweak seasonings a bit but recipe coming soon
- Fresh figs
- My last Raspberry Amande (review here) with some coconut and cacao nibs for topping
- Living Spoonful crackers, also leftover from the trip (and a bit crumbled by now)
