Not only is it October, but it is already day 5 of the month – the Brown-Bag Challenge is over (see here for my lessons learned) so I am back to my slightly more relaxed lunchbox blogging schedule. And by relaxed I mean you might see more weekend lunchbox posts again.
Above is my lunchbox from this past Monday:
- Romaine and kale, topped with Reinvented Mac and Peas with Mushrooms and roasted Blue Hubbard squash, which is definitely not as sweet as my beloved Butternut, but had a nice texture
- Raw cacao nibs and raw cashews – this time I tried sprinkling a few drops (maybe 7?) vanilla stevia over the cashew and nibs. It softened the cashews by lunchtime, so I am not sure I would recommend this method, but I enjoyed the added sweetness to this snack.
