This was this past Thursday’s lunchbox – you can see it has a kale salad and some of the components from lunchboxes earlier in the week (grey hummus, curry-spiced quinoa, leftover squash). The highlight of my lunchbox, though, was the roasted sweet potato topped with Protein Fluff, a concept I saw on Gina’s blog, Fitnessista. New obsession alert! Incidentally, the first time I saw the protein fluff concept, I thought it was unappetizing, but then, a few months later, ie this week, I was preparing a usual snack of roasted sweet potato and Sunbutter, and realized I was a little low on protein for the day. It was late in the day, and the roasted potato was already ready to be eaten, so protein fluff came to mind. I doctored up the basic concept with cinnamon and was pleasantly surprised with the results! It is like an airy version of vanilla cinnamon flavored nut butter. Yum.

Protein Fluff. Yes. I think I need some. I'm baking sweet potatoes for dinner tonight and I think maybe I need one extra, just for breakfast tomorrow. With protein fluff on top. Thanks for the idea!
