Adopt a Gluten-Free Blogger, an event created by Sea of Book of Yum and hosted this month by Lauren from As Good As Gluten, snuck up on me more than usual. I adopted Debi of Hunter’s Lyonesse and had plans to make her Flourless Pumpkin Pie Cookies as well as her easy Horchata and Pumpkin Pie “Milk” Shake (made with the rice-based horchata) but as you can tell from the picture, I only made the beverages. The cookies are on deck for this weekend though, as they look scrumptious and easy, along with being grain-free and vegan. My kind of baking.
I discovered Debi through the supportive community that comprises gluten-free bloggers. She combines humor with seriousness and has addressed a variety of gluten-free topics on her blog. And the recipes are delicious. I love the easy approach to Horchata (I substituted agave for the honey). Somehow after a night, the rice milk had soaked in the agave and cinnamon, and become somewhat thicker. It was a lovely component of the pumpkin milk shake, which was a nice change from my usual pumpkin smoothies. My husband, who has had horchata more recently than me, pronounced Debi’s recipe on-point. I was too busy wresting the glass away from him so I could have more.

Thank you for the wonderful adoption post, Valerie! I tried leaving a comment from my phone the other night, but it didn't work. Finally made it to a computer (we're on vacation) to do so. I'm so glad that you and your husband enjoyed the horchata and I hope you like the cookies when you finally get to make them!
